Life just doesn’t slow down very often, does it? I’m learning more and more that that’s the case and natural pauses are hard to come by. My solution (when I remember) is to stop whatever I’m doing, take a deep breath, and redirect my focus to something else for awhile. Sometimes that’s spending time outside, sometimes it’s reading a book, or sometimes it’s just sitting and staring at the wall trying to clear my mind of the 1,000 things buzzing around in there, always looking for a place to land.

Another thing that helps me reset is wandering into the kitchen, pulling out a few ingredients that grab my attention, and creating a simple meal. Nothing fancy, nothing life-changing, and not for any purpose other than to relax, create, and enjoy. These zucchini tacos are one of my new favorite recipes that was born from an overwhelmed escape to the kitchen. We moved a few weeks ago and were getting ready to go to Iceland at the same time, and cooking seemed like both a chore but an avenue of relaxation at the same time. Once I slowed down enough from a busy day and was able to get in the kitchen, the familiarity of food was enough to settle my mind, if even just for an hour.

We were low on ingredients but had a megalodon amount of zucchini in the fridge along with a trusty onion, an avocado starting to go bad, and my trusty spice cabinet. Oh yeah, and tortillas!

These 5 Ingredient Zucchini Lovin’ Tacos come together in 15 minutes and are packed with good spice, nutrients, and can be added to your line-up of meatless Monday recipes. It’s definitely one of those recipes that you can make without much thought, but hopefully the motions of simple chopping, sautéing, mashing the avocado, stirring, etc., help you to decompress after a long day. My kitchen is one of my safe places, which is a good thing I guess since I spend a LOT of time in there. And, now I have another recipe to add to my list for those brainless weeknight meals when all I have the capacity to do is something super simple.

Ingredients

Scale
  • 2 tablespoons olive oil (affiliate)
  • 4 small to medium sized zucchini, chopped
  • 1 medium red onion, diced
  • 1 teaspoon smoked paprika
  • 1 1/2 teaspoons salt
  • 1/4 teaspoon black pepper
  • 8 small tortillas

Easy Guacamole

  • 2 avocados
  • 1 tablespoon lime juice
  • 1/2 teaspoon salt
  • Pinch black pepper

Instructions

  1. In a large skillet, saute zucchini and onion in olive oil until starting to soften, about 5 minutes.
  2. Add spices, stir, and let cook for another 5 minutes until zucchini and onion are completely softened, but the zucchini is still holding its shape.
  3. Mash together avocados, lime juice, salt, and black pepper in a small bowl.
  4. Serve zucchini filling inside tortilla, then top with a dollop of guacamole.

  1. I have a question about your delicious chicken tortilla soup. It says it’s a 20 minute instant Pot recipe. It took over 40 minutes for my 6 qt Instant Pot to come up to pressure!!! I’ve only had it a few months and this has never happened before. The chicken was Not frozen. Why did this take So long?

    1. Hi Kari, I’m so glad you tried and enjoyed the soup! I’m not exactly sure why it took your instant pot so long to come up to pressure unless your ingredients were all really cold? Sometimes when I’m making soup I’ll use the sauté setting to get everything heated up and then it doesn’t take so long to come up to pressure. The more full your instant pot, the longer it will take as well.
