These pancakes have been a staple in the Van Slyke household since the pre-kid era. We would lazily wake up on a Saturday morning around 9:30, take our time whisking up these beauties, and eat them out on our porch whilst listening to the birds and the breeze. Ha! What times those were.

I still love making these on Saturdays, but it’s a bit more loud and crazy and “what?? you pooped?? or you HAVE to poop? ohhhhhh, you’re saying boom boom! No poop! Got it!” Times are a bit different 🙂

The first time I made these Coconut Chia Pancakes I remember grabbing a can of coconut milk, the glass jar of chia seeds, and marrying the two. Those ingredients were the beginnings of these amazing pancakes!

I still don’t cook nearly enough with chia seeds given their extensive health benefits, but it really is a must. They’re just so fun and tasty!

The smell of these Coconut Chia Pancakes as they bubble on the griddle is just indescribable. You’ve got the scent of cinnamon, coconut, oats, then you add in the peanut butter, honey, and syrup and the fumes are enough to make you swoon. The best part of allis that they’re healthy and so filling for a great weekend breakfast!

These guys are on our regular Saturday morning breakfast rotation and I hope they make the cut for yours too. Our boys love pancakes so we usually have these basic cakes made from my favorite DIY Pancake Mix on the weekdays, but for a special treat, we do these on the weekends!

Coconut Chia Pancakes

Ingredients

Scale
  • ½ cup quick cooking oats
  • ½ cup whole wheat flour
  • ½ cup all-purpose flour
  • ½ teaspoon salt
  • ¾ teaspoon baking soda
  • ⅓ cup packed brown sugar (affiliate)
  • ½ teaspoon ground cinnamon (affiliate)
  • 1 egg
  • 1 teaspoon vanilla (affiliate)
  • 2 tablespoons coconut oil (affiliate), melted
  • 1 cup coconut milk (affiliate)
  • 1 tablespoon chia seeds
  • 2 tablespoons peanut butter (affiliate)
  • 2 tablespoons maple syrup (affiliate)
  • 1 tablespoon honey (affiliate)

Instructions

  1. Add chia seeds to coconut milk, set aside to let bloom while mixing the rest of the ingredients.
  2. Mix together oats, flour, salt, baking soda, brown sugar, and cinnamon.
  3. Add egg, vanilla, melted coconut oil, and milk/chia seed mixture. Whisk gently until all ingredients are combined.
  4. Heat griddle or skillet to medium high heat, pour batter into desired size of pancakes. Cook for approx. 1 minute on each side or until golden brown.
  5. Heat peanut butter, maple syrup, and honey until melted and creamy. Spread over top of pancakes. Enjoy!
