Hi friends! It’s hump day! Kev has been gone this week and he comes home tomorrow, so I’m getting excited about that. Usually when he leaves I fall into a Netflix watching, ice cream eating, sleeping in kind of coma, but I wasn’t gonna fall into that this time. Nope. I had a list of projects I had been wanting to get to for awhile, so this was the perfect time to tackle them! Do you have any idea how much you can get done when you’re home alone for 4 straight days with no other commitments?? It’s crazy.

My first project was repainting a big wooden mirror we’ve had sitting on the floor since we moved in (along with all of our other pictures and wall hangings). Neither of us have an ounce of decorating prowess in our blood, so we just haven’t even attempted to pretty the place much. We both know what styles we like and how to see good design vs. bad, but when it comes to actually doing something in our own home, it’s like trying to get one of our cats to take a bath. Painful and impossible. So, I started simple by painting the mirror frame white. *WHEW!!*

My second project was to finally do something with my office. It’s been a collection of unpacked boxes and food blog props with a constantly messy desk thrown in the corner.  I’ve just been living with it, but had been wanting to create a cozy space that I actually wanted to spend time in. I didn’t do much, just painted the desk a chalky blue, hung a few pictures and cleaned, but already it feels so much better! It also happens to be where I shoot all my food photos, because there’s a perfect large window that lets all the yummy sunlight in. It’s a work in progress, that’s for sure. Maybe I’ll post pictures sometime and see if you guys can give me any suggestions!

Since Kev left I’ve literally been eating cereal, avocado toast, eggs, and yogurt, so it was time to get back on track today with a tasty salad! This salad took me less than 10 minutes to make and is a great one to put on your summer picnic list. All of the ingredients are so fresh and when they’re scooped into an avocado shell, ohhh my. When you get in there with your spoon and carve out a big bite of avocado mounded with the green onion, cucumber, orange, lemon, couscous medley, there’s no better bite to be found anywhere in the world.

Couscous Salad in Avocado Bowls

Ingredients

Scale
  • 1/2 cup Chicken Broth (affiliate)
  • 1/2 cup Water
  • 1/2 teaspoon Salt
  • 1 cup Couscous
  • 1/8 teaspoon Black Pepper
  • 1 tablespoon Olive Oil (affiliate)
  • 1 teaspoon White Vinegar
  • Juice from 1 small lemon
  • 1 tablespoon Parsley, chopped
  • 1 large Green Onion, chopped
  • 3/4 cup Spinach, roughly chopped
  • 1/2 cup Orange sections
  • 1/2 cup chopped Cucumber
  • 2 Avocados, cut in half

Instructions

  1. Bring water, chicken broth, and salt to a boil. Add couscous, then cover and take off heat. Let sit for 5 minutes.
  2. Pour couscous into bowl and add rest of ingredients except for avocados. Stir to combine. **Spinach will slightly wilt from the heat of the couscous.
  3. Scoop out half of each Avocado half and fill with couscous mixture.
  4. Serve!
