A salad full of fresh and crunchy vegetables and drizzled with a creamy ginger soy dressing, this satisfying summer salad is a quick and easy go to!
This salad is one of my new best friends for so many reasons!
#1. It has napa cabbage, which is the perfect marriage between straight up cabbage and a slightly more understated lettuce that doesn’t completely overwhelm you with crazy crunchiness and that signature raw cabbage flavor.
#2. It takes all of 15 minutes to put together. Who doesn’t like a salad that they can assemble from fridge to table in less time than it takes to watch an episode of New Girl on Hulu?? Not that that’s a real life example or anything… just hypothetically of course… 😉
#3. It has chow mein noodles. Those mystical, magical, crunchy, all is well in the world when you eat half a can without anything else kind of noodles.
#4. The summer vibes are strong with it! It’s light, it’s fresh, it uses common pantry ingredients, and would be awesome paired with a grilled chicken breast and some watermelon!
This salad is made complete with a dressing of ginger, soy, rice vinegar, greek yogurt, and a few other tasty things! I was listening to a podcast yesterday about ways to maintain a healthy diet when eating out, and one of the tips was to shake up your favorite homemade dressing and bring it along with you when ordering a salad. That might be a little extreme for some of you, but usually restaurant salads are loaded up with some not so healthy dressings, so it really is a great way to lighten up. This dressing would be an awesome one to keep on hand at the ready for those situations or just for throwing a quick salad together like this asian slaw! It’s made lighter with greek yogurt rather than a mayonnaise base, and has just a little bit of honey for a natural sweetener.

- 1 small head napa cabbage
- 2 cups chopped broccoli florets
- 2 large carrots, grated
- 2 large green onions, sliced
- ¾ cup chow mein noodles
- 1 tablespoon black sesame seeds
- 1 large clove garlic, minced
- ¼ teaspoon ground ginger
- 2 tablespoons olive oil
- 2 tablespoons rice vinegar
- 2 tablespoons soy sauce
- 1 tablespoon honey
- ¼ cup plain greek yogurt
- Toss together all salad ingredients in large bowl.
- Add all dressing ingredients to a mason jar, shake well, then drizzle over top of salad and toss to combine.
