Did I mention that it’s almost Fall?? And for about 98% of the population, they equate that first falling leaf with their first PSL from Starbucks. Please don’t shoot me for what I’m about to say. I’ve had a pumpkin spice latte on 4 or 5 different occasions over the years. Yes, I also know there are people out there that have consumed that many in one day. Yes, I know it tastes so delicious and reminds you of everything wonderful about the changing seasons, but did you also know they’re not actually super good for you?

I’m far from being the health police, but some of you get a little crazy over the PSL and then forget that the pumpkin doesn’t actually count towards your daily vegetable intake and the rest of the drink is basically pure sugar. Lol. To each his own though. If that’s your one treat for the day, by all means, enjoy! Me, I’ll be over here curled up with my bowl of Pressure Cooker PSL Oats on the daily. It’s got REAL ingredients in it, has that much needed kick of morning caffeine, AND doesn’t cost a bazillion dollars.

You’ve heard this before, but steel cut oats were one of the first things I made in my pressure cooker and I was hooked instantly. I’m not an oats fan, but when I can stir in all sorts of goodness like pumpkin puree, all the spices, nutty brown sugar, and COFFEE, I’m not sure how I couldn’t be in love!

So, let’s recap. These Pumpkin Spice Latte Oats are for:

The people who are obsessed with PSL’s already.

The people who are mildly obsessed but are thinking they don’t need all that sugar.

The people who are instant pot/pressure cooker freaks and need ALL the recipes.

Pressure Cooker Pumpkin Spice Latte Oats

Ingredients

Scale
  • 1 cup steel cut oats (affiliate)
  • 2 cups water
  • 1 cup milk
  • 1/2 cup pumpkin puree
  • 1 teaspoon pumpkin pie spice
  • Pinch of salt
  • Pinch of black pepper
  • 1/4 cup brown sugar (affiliate)
  • 2 tablespoons vanilla (affiliate)
  • 1/2 cup strong coffee
  • 1/4 cup half and half or heavy cream

Instructions

  1. Combine oats, water, and milk in your pressure cooker and set to high pressure for 12 minutes.
  2. *If using an Instant Pot, select Multigrain Less.
  3. When time is up, let the pressure naturally release for 5 minutes, then release any remaining pressure.
  4. Stir in pumpkin, pumpkin pie spice, salt, pepper, brown sugar, vanilla, and coffee.
  5. Ladle into a bowl or mug, top with some extra brown sugar and a drizzle of heavy cream.
  6. Eat!
