Arugula Salad with Stone Fruit

Ingredients

Scale
  • 1 (7 ounce) bag arugula
  • 1 peach, pitted and sliced
  • 1 plum, pitted and sliced
  • 1 handful raspberries
  • 1/2 cup freshly grated parmesan cheese

Dressing

  • Juice of one lemon (about 2 tablespoons)
  • 2 tablespoons plain greek yogurt
  • 2 tablespoons olive oil (affiliate)
  • 1/2 teaspoon salt
  • 1 teaspoon sugar
  • 1/4 teaspoon black pepper

Instructions

  1. In a large bowl, layer arugula, peach, plum, raspberries, and parmesan cheese.
  2. Whisk together all ingredients for dressing and drizzle over top of salad.
