Asian Grilled Chicken Lettuce Wraps with Dorot

Chicken marinade

Veggies

  • 1 cucumber, chopped
  • 1 red bell pepper, chopped
  • 1/2 cup cilantro, chopped
  • 2 carrots, grated
  • 1/2 cup purple cabbage, thinly sliced

Peanut Sauce

  • 1/2 cup natural crunchy peanut butter (affiliate)
  • 2 tablespoons soy sauce (affiliate)
  • 2 tablespoons brown sugar (affiliate)
  • 1/2 lime, juiced
  • 1 teaspoon sriracha (affiliate)
  • 1/2 teaspoon ground ginger
  • 2 tablespoons water
  • 2 small heads butter (affiliate) lettuce

Instructions

  1. Whisk together lime juice, basil, soy sauce, honey, rice vinegar, and salt.
  2. Add chicken tenders to marinade and place in fridge for 2-12 hours.
  3. In a large bowl, stir together cucumber, bell pepper, cilantro, carrots, and purple cabbage, and refrigerate until ready to use.
  4. For peanut sauce, whisk together peanut butter, soy sauce, brown sugar, lime juice, sriracha, ground ginger, and water. Refrigerate until ready to use.
  5. When chicken is done marinating, grill over high heat for 2-3 minutes per side, flipping until the chicken reaches an internal temperature of 165 degrees.
  6. To assemble wraps, lay out individual leaves of butter lettuce, and layer with cut up chicken, veggies, and drizzle with peanut sauce. Serve immediately or store in fridge until ready to eat!
