Blackberry Coconut Steel Cut Oats

Ingredients

  • 1 cup steel cut oats (affiliate)
  • 2 cups water
  • 1 cup milk
  • 1 cup blackberries
  • ½ cup coconut, toasted
  • ¼ cup pecans, chopped
  • honey (affiliate) for drizzling

Instructions

  1. Bring milk and water to a boil in medium saucepan, add oats and stir.
  2. Reduce heat to low, and simmer for 20-30, until oats reach your desired consistency. Stir occasionally to keep oats from sticking to pot.
  3. Meanwhile, chop pecans and toast coconut in skillet on medium high until lightly browned.
  4. When oats are done, spoon into bowls and garnish with pecans, coconut, blackberries, and drizzle with honey.
