- 1 cup oats
- 1/2 cup coconut
- 2 tablespoons pepitas
- 1/4 cup brown sugar (affiliate)
- 1/8 teaspoon ground cinnamon (affiliate)
- 1/8 teaspoon ground cardamom
- 1 large egg white
- 2 teaspoons water
- 1 cup halved walnuts (affiliate)
- 1 cup dried chopped fruit (I used apricots and mango)
Instructions
- Preheat oven to 300 degrees and prepare large baking sheet by lining it with a large sheet of parchment paper.
- In blender or food processor, pulse oats, coconut, pepitas, brown sugar, cinnamon, and cardamom until well-chopped but not yet powdery.
- In large mixing bowl, whisk egg white and water until frothy.
- Add walnuts and dried chopped fruit to egg white. Mix until nuts and fruit are liberally coated with egg white.
- Pour oatmeal mixture over top and loosely fold in until oatmeal is starting to coat the nuts and fruit.
- Pour onto prepared baking sheet and gently spread out into single layer.
- Bake for 10 minutes then remove and gently stir.
- Place back in oven and bake for 10 more minutes. Remove, let cool, and store in airtight container.
