The smell of these Coconut Chia Pancakes will make you swoon at every whiff! Cinnamon. Coconut. Oats. Peanut Butter. Honey Syrup! I can’t get enough!

- ½ cup quick cooking oats
- ½ cup whole wheat flour
- ½ cup all-purpose flour
- ½ teaspoon salt
- ¾ teaspoon baking soda
- ⅓ cup packed brown sugar (affiliate)
- ½ teaspoon ground cinnamon (affiliate)
- 1 egg
- 1 teaspoon vanilla (affiliate)
- 2 tablespoons coconut oil (affiliate), melted
- 1 cup coconut milk (affiliate)
- 1 tablespoon chia seeds
- 2 tablespoons peanut butter (affiliate)
- 2 tablespoons maple syrup (affiliate)
- 1 tablespoon honey (affiliate)
Instructions
- Add chia seeds to coconut milk, set aside to let bloom while mixing the rest of the ingredients.
- Mix together oats, flour, salt, baking soda, brown sugar, and cinnamon.
- Add egg, vanilla, melted coconut oil, and milk/chia seed mixture. Whisk gently until all ingredients are combined.
- Heat griddle or skillet to medium high heat, pour batter into desired size of pancakes. Cook for approx. 1 minute on each side or until golden brown.
- Heat peanut butter, maple syrup, and honey until melted and creamy. Spread over top of pancakes. Enjoy!
