On-the-Go Energy Balls

Description

On-the-Go Energy Balls are my favorite nutritious snack that my whole family loves! They’re perfect for busy mornings, after daycare snacks, or an evening treat.


Ingredients

Scale
  • 1 cup chocolate chips (affiliate), chopped
  • 6 cups oatmeal
  • 1 cup sunflower seeds
  • ½ cup flax seed
  • 1 ½ cups dried cranberries
  • 2 18oz jars peanut butter (affiliate) (creamy or crunchy depending on your preference)
  • 1 teaspoon vanilla (affiliate)
  • 1 teaspoon cinnamon (affiliate)
  • ½ cup honey (affiliate)

Instructions

  1. Throw chocolate chips, oatmeal, sunflower seeds, flax, and dried cranberries into a blender or food processor. Pulse until large chunks start to break up.
  2. Put oatmeal mixture in large bowl and add remaining ingredients. Stir until combined. If mixture is too crumbly to form into ball, add more peanut butter or honey until mixture starts to clump together.
  3. Roll into balls 1 inch in diameter.
  4. Keep in airtight container.
