Freezer Breakfast Burritos

Ingredients

  • 2 medium sized sweet potatoes
  • 8 eggs
  • 1/4 cup milk
  • 1, 14.5oz can black beans (affiliate), drained and rinsed
  • 1/4 cup cayenne pepper
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 10 tortillas
  • 2 cups shredded cheddar cheese
  • 1/2 cup salsa (affiliate)

Instructions

  1. Preheat oven to 450 degrees and place sweet potatoes on baking sheet lined with foil. Pierce with fork 5-6 times and then bake for 45 minutes to 1 hour, until tender.
  2. Take peeling off of sweet potato and mash, then stir in 1 teaspoon of salt.
  3. In large skillet, scramble eggs with milk and then stir in black beans, cayenne, salt, and black pepper.
  4. Divide egg mixture into 10 portions and spoon onto tortillas, then top with shredded cheese, and a drizzle of salsa.
  5. Roll up into a burrito, wrap in foil, and freeze until ready to eat, then bake or microwave until warm.
