Mascarpone French Toast with Smashed Raspberries

  • 1 large egg
  • ½ cup milk or heavy cream
  • 1 teaspoon cinnamon (affiliate)
  • 2 tablespoons sugar
  • 1 teaspoon vanilla (affiliate)
  • 2 tablespoons butter (affiliate)
  • 8 thick slices french bread
  • 8 oz mascarpone cheese
  • ¾ cup raspberries
  • maple syrup (affiliate)


  1. In shallow bowl, whisk together egg, cream or milk, cinnamon, sugar, and vanilla. **If camping, you can do this ahead of time and keep the egg mixture in an airtight container in the cooler.
  2. In cast iron skillet, heat butter over medium high heat.
  3. Spread a healthy amount of mascarpone on one slice of bread and top it with another piece, creating a sandwich.
  4. Dip sandwiches in egg mixture, making sure to completely soak all sides and edges.
  5. Place sandwiches in the heated skillet. Cook for about 3 minutes on each side, or until both sides are brown and toasted.
  6. Top with smashed raspberries and drizzle with maple syrup.
