Mean Green Grilled Cheese Sandwich

  • Author: Kitschen Cat
  • Total Time: 10 mins
  • Yield: 2 sandwiches 1x

Ingredients

Scale
  • 4 slices bread (I prefer something a little heartier like a sourdough or whole grain)
  • 4 tablespoons butter (affiliate)
  • 1 cup chopped fresh spinach
  • 1 tablespoon minced fresh basil
  • 2 small avocados, mashed
  • 1/4 cup freshly grated parmesan cheese
  • 3/4 cup grated mozzarella cheese
  • Salt and pepper to taste

Instructions

  1. In a small mixing bowl, combine spinach, basil, avocado, cheese, and salt and pepper.
  2. Preheat an electric griddle to medium high heat or a skillet on the stovetop to medium heat.
  3. Spread 1 tablespoon of butter onto each slice of bread then spoon half of the spinach mixture onto two of the slices.
  4. Place butter side down into the skillet and top with another slice of bread, butter side out.
  5. Let cook for 2-4 minutes until the bottom is toasted and cheese is starting to melt. Flip and cook for another 2-4 minutes then serve right away!
