Pressure Cooker Orange Chicken Stir Fry

Ingredients

  • 2 cloves garlic, minced
  • 1/2 cup orange juice
  • 1/4 cup honey (affiliate) or maple syrup (affiliate)
  • 1/4 cup soy sauce (affiliate)
  • 2 tablespoons rice wine vinegar
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon black pepper
  • 1 large orange, zested
  • 1 lb boneless, skinless chicken breasts, cut into 1 inch pieces
  • 2 tablespoons cornstarch
  • 10oz pkg frozen stir fry vegetables

Instructions

  1. Add all ingredients except for cornstarch and stir fry vegetables to pressure cooker.
  2. Stir, lock lid, and set to high pressure for 3 minutes.
  3. When time is up, do a quick release and turn on the sauté setting.
  4. Add veggies and simmer for 3-4 minutes.
  5. Whisk cornstarch with 2 tablespoons water in small bowl, then pour into pressure cooker. Stir until juices have thickened.
  6. Serve over rice!
