Pressure Cooker Red Velvet Raspberry Molten Cake is the perfect decadent Valentine’s Day dessert for 2!
Ingredients

- 4 tablespoons butter (affiliate)
- 1/2 cup dark chocolate chunks/chips
- 1 tablespoon cocoa powder (affiliate)
- 1/4 cup granulated sugar
- 2 tablespoons all purpose flour
- 1/4 teaspoon salt
- 1/2 teaspoon red food coloring
- 1 egg
- 6 fresh raspberries, mashed
Instructions
- In a small saucepan over low heat or in the microwave, whisk together butter and dark chocolate until melted.
- Remove from heat and stir in cocoa powder, sugar, flour, salt, red food coloring, and egg.
- Grease a small heat proof cereal bowl with cooking spray and pour chocolate batter into the bowl.
- Make a small hole in the batter and spoon mashed raspberries into the middle, covering gently with a thin layer of batter.
- Place trivet in pressure cooker and add 1 cup of water, then lower bowl onto trivet.
- Lock lid and set to high pressure for 15-20 minutes, depending on how gooey you would like your cake.
- When time is up, do a quick release, then dump molten cake upside down onto a plate and sprinkle with powdered sugar.
