Pressure Cooker Savory Mashed Sweet Potatoes

Ingredients

  • 3 lbs sweet potatoes
  • 2 whole cloves garlic
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon dried parsley
  • 1/4 teaspoon dried sage
  • 1/2 teaspoon dried rosemary
  • 1/2 teaspoon dried thyme
  • 1/4 cup milk
  • 2 tablespoons butter (affiliate)
  • 1/2 cup fresh grated parmesan

Instructions

  1. Peel potatoes and cut into rough 2 inch pieces.
  2. Place trivet in bottom of pressure cooker and put potatoes and garlic on top.
  3. Add 1 1/2 cups water and set to high pressure for 9 minutes.
  4. When time is up, do a quick release and then carefully drain water.
  5. Mash potatoes and garlic with a potato masher or whip with an electric mixer.
  6. Add in all of the herbs, milk, butter, and parmesan, and stir until completely combined.
  7. Serve warm!
