Pressure Cooker Spanish Rice

Ingredients

  • 1 tablespoon olive oil (affiliate)
  • 1/2 cup onion, diced
  • 1/2 cup green pepper, diced
  • 1 cup long grain white rice
  • 8 oz mild or medium salsa (affiliate)
  • 1 cup water
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In pressure cooker, saute onion and green pepper in olive oil until starting to soften, about 2 minutes.
  2. Add in rice and saute for 2 minutes until rice starts to become opaque.
  3. Add salsa, water, salt, and pepper. Stir then lock lid and set to high pressure for 5 minutes.
  4. Do a natural release for 5 min followed by a quick release for any remaining pressure.
  5. Serve warm!
