- In pressure cooker, saute onion and green pepper in olive oil until starting to soften, about 2 minutes.
- Add in rice and saute for 2 minutes until rice starts to become opaque.
- Add salsa, water, salt, and pepper. Stir then lock lid and set to high pressure for 5 minutes.
- Do a natural release for 5 min followed by a quick release for any remaining pressure.
- Serve warm!
