Pumpkin Spice Banana Pear Muffins

Ingredients

  • 2 bananas, mashed
  • 1 pear, peeled and diced
  • 1 teaspoon vanilla (affiliate)
  • 1 egg
  • ¼ cup canola oil (affiliate)
  • ½ cup white sugar
  • ¼ cup brown sugar (affiliate)
  • 1 ½ cups wheat flour
  • ¾ cup oatmeal
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon pumpkin pie spice

Streusel topping

  • ½ cup brown sugar (affiliate)
  • 2 tablespoons flour
  • ½ teaspoon pumpkin pie spice
  • 1 tablespoon butter (affiliate), melted

Instructions

  1. Preheat oven to 375 degrees. Prepare muffin tin with cooking spray.
  2. Mix together all wet ingredients until combined (banana, pear, vanilla, egg, oil, and sugars).
  3. Add dry ingredients (flour, oatmeal, baking powder, baking soda, salt, and pumpkin pie spice). Mix gently until just combined. Be sure to not overmix!!
  4. Using a ¼ cup, scoop batter into muffin tin so that each well is ½-¾ full.
  5. Combine brown sugar, flour, pumpkin pie spice, and butter. Sprinkle over top of batter.
  6. Bake for 15-18 minutes, or until a toothpick inserted into a muffin comes out clean.
