- 1 14.5oz can pumpkin puree
- 2 eggs
- 1 14.5 oz can coconut milk (affiliate)
- 2 mashed bananas
- 1 teaspoon vanilla (affiliate)
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 tablespoon pumpkin pie spice
- 1 teaspoon cinnamon (affiliate)
- 3 cups rolled oats
- 1/2 cup uncooked quinoa (affiliate)
Instructions
- Preheat oven to 350 degrees and grease 9×13 inch baking dish.
- Mix together pumpkin, coconut milk, bananas, and vanilla until well combined.
- Add baking powder, salt, pumpkin pie spice, cinnamon, oats, and quinoa. Mix until all ingredients are incorporated.
- Pour batter into prepared baking dish and bake for 25-30 minutes.
- Let cool slightly before cutting and serving.
