Pumpkin Walnut Brownies drizzled in homemade pressure cooker caramel are an amazingly decadent addition to any festive celebration!


Ingredients

Scale
  • 3/4 cup canola oil (affiliate)
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar (affiliate)
  • 2 teaspoons vanilla (affiliate)
  • 2 eggs
  • 1/2 cup pumpkin
  • 3/4 cup flour
  • 1/4 cup cocoa powder (affiliate)
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 teaspoons pumpkin pie spice
  • 1/2 cup chocolate chips (affiliate) + more to sprinkle on top
  • 1/2 cup chopped walnuts (affiliate)

Instructions

  1. Grease an 8×8 baking dish with cooking spray and preheat oven to 350 degrees.
  2. Whisk together oil, sugars, and vanilla until fully combined then stir in vanilla, eggs, and pumpkin. Mix to combine.
  3. Add flour, cocoa powder, baking powder, salt, and pumpkin pie spice and gently mix until dry ingredients are all incorporated.
  4. Gently fold in chocolate chips and walnuts then pour into glass baking dish.
  5. Place into preheated oven and bake for 28-32 minutes, doing a toothpick test towards the end to check if it’s done!
  6. Let cool slightly then sprinkle with chocolate chips and drizzle with caramel.
