Quick Pickles

Ingredients

  • 2 bunches radishes, thinly sliced
  • 2 jalapenos, seeded and thinly sliced
  • ½ red onion, thinly sliced
  • 2 large carrots, thinly sliced
  • 1 ½ cups apple cider vinegar or white wine vinegar
  • 1 ½ cups water
  • 6 tablespoons honey (affiliate) or maple syrup (affiliate)
  • 4 teaspoons salt
  • **Optional add-ins, black peppercorns, whole coriander

Instructions

  1. Combine radishes, jalapenos, onion, and carrots, divide into 2 mason jars.
  2. To prepare brine, bring vinegar and water to a boil with honey/maple syrup and salt.
  3. Pour immediately over vegetables
  4. Let mixture cool to room temperature then serve immediately or store in the fridge for several weeks.
