Rosemary Garlic Bagels. Wheat bagels chock full of fragrant rosemary and toasted garlic. The smell coming from your kitchen while these are baking will make your mouth water!

Rosemary Garlic Bagels

Ingredients

  • 2 1/4 teaspoons active dry yeast
  • 1 tablespoon white sugar
  • 1 1/2 cups warm water
  • 2 tablespoons olive oil (affiliate)
  • 1 1/2 teaspoon kosher salt (plus more for sprinkling on bagels)
  • 2 1/2 cups all-purpose flour, plus extra for kneading
  • 1 1/2 cups wheat flour
  • 2 tablespoons dried rosemary
  • 2 cloves garlic
  • **Cheddar cheese, optional

Instructions

  1. Start by mixing yeast, sugar, and warm water in mixing bowl of stand mixer or in stand alone bowl if you’re choosing to mix your bagels by hand. Let yeast stand for 5 minutes.
  2. While yeast is blooming, mince garlic cloves then add 1 tablespoon olive oil to small skillet and saute garlic for 1-2 minutes, until just starting to brown.
  3. Add remaining olive oil, kosher salt, flours, dried rosemary, and minced, toasted garlic to mixing bowl with yeast. Mix well, either with your dough hook or with a wooden spoon until flour is all combined and dough is sticky but pulling away the sides of the bowl. If dough is too sticky, knead in a bit more flour.
  4. Brush large bowl with olive oil, form dough into a ball and place in the bowl, then cover with cloth and let rise in warm place until doubled, about 1 hour
  5. After dough has doubled in size, remove from bowl and place on flat work surface. Cut dough into 12-16 pieces, depending on how big you would like your bagels.
  6. Form dough pieces into balls and let rest on work surface for 10 minutes.
  7. To form bagels, punch hole in middle of dough ball and stretch to form a bagel shape.
  8. Let rest for another 30 minutes.
  9. Bring large pot of water to a boil and place bagels in the water (they will float). Boil for 1 minute on each side and then remove with slotted spoon.
  10. Preheat oven to 425 degrees.
  11. Prepare large baking sheet by spraying with cooking spray and then sprinkling liberally with kosher salt.
  12. Place boiled bagels on baking sheet and sprinkle with more kosher salt.
  13. If you would like to make your bagels cheesy, sprinkle with cheddar cheese at this time.
  14. Bake for 13-15 minutes.
  15. Store in airtight container in a cool space.
