Sheet Pan Sesame Soy Steak and Veggies

Ingredients

  • 1 1/2 lb flank steak
  • 1/4 cup soy sauce (affiliate)
  • 2 tablespoons olive oil (affiliate), divided
  • 1 teaspoon sesame oil
  • 1 medium zucchini, cut into 1 inch pieces
  • 1 red bell pepper, cut into 1 inch pieces
  • 1 medium red onion, cut into 1 inch pieces
  • salt and pepper to taste

Instructions

  1. Preheat oven to 450 degrees.
  2. In a large bowl whisk together soy sauce, 1 tablespoon of olive oil, and sesame oil. Place steak in marinade and let sit.
  3. Toss veggies with 1 tablespoon of olive oil and then sprinkle with salt and pepper to taste.
  4. Lay veggies on large baking sheet, spread out into a single layer.
  5. Roast for 10 minutes then remove from oven.
  6. Move veggies to the sides and place marinated steak in middle of baking sheet. Sprinkle with salt and pepper then bake for 10-15 minutes, depending on how you like your steak cooked.
