Summer spinach and berry salad with lemon chia vinaigrette is a refreshing summer salad with the bright flavors of fresh berries, lemon zest, cool avocado, and dark leafy greens.
Dinner Conversation last night:
Me: This salad tastes like candy.
Kev: Mmmmmmm mmmhmmm.
Me: It’s like dessert salad – how does it taste so good???
Kev: **Crunch crunch munch
Me: Does this taste like candy to you??? How can it even be healthy??
Newsflash: this salad is for those of you who would rather eat skittles over spinach, gummi worms over greens, and lollipops over lettuce. It’s just that good.
How was your 4th?? Did you eat until your stomachs burst? We spent the day with friends eating then swimming then eating then swimming, then eating then… you get the point. So much sun and food that it was hard to move yesterday! Perfect time for a leafy green salad to get your energy back and your eating habits back on track.
When I was making this salad, I realized that all the ingredients could be thrown straight into the blender to make a green smoothie with berries, chia seeds, and nuts! I actually still have half of the salad left in my fridge and plan on making a super foods smoothie later this afternoon. If you like that idea, I’d recommend leaving the salt, pepper, and vinegar out of your dressing and then you can literally blend everything into a tasty smoothie!
This is a beautifully simple salad that is a quick fix for those times when your body needs a reset from a weekend of feasting. Even better than that, it’s a great option for those of you who struggle to enjoy your leafy greens!
