Best Ever Chocolate Chip Cookies

Ingredients

  • 1 cup (2 sticks of butter (affiliate)) at room temperature
  • ¾ cup granulated sugar
  • ⅔ cup brown sugar (affiliate)
  • 1 egg
  • 1 ½ tablespoons milk
  • 2 ½ teaspoons vanilla (affiliate)
  • 1 ⅔ cup all purpose flour
  • 1 ¼ teaspoon baking soda
  • ¾ teaspoon baking powder
  • ¼ teaspoon salt
  • 1 ⅓ cups oats, ground until coarse in blender (affiliate) or food processor (affiliate)
  • 1 cup chocolate chips (affiliate)
  • **optional** ¾ cup pecans, ground until coarse in blender or food processor

Instructions

  1. Preheat oven to 375 degrees.
  2. In stand mixer, beat together butter and sugar until creamy.
  3. Add egg, milk, and vanilla, and mix until smooth.
  4. Add flour, baking soda, baking powder, and salt, and mix briefly until combined. Do not overmix.
  5. Add ground oats, pecans if using, and chocolate chips. Gently stir until combined.
  6. Cover a baking sheet with parchment paper, then drop 1 inch cookie dough balls onto baking sheet.
  7. Bake for 10-12 minutes, then place on wire rack to cool.
