- 1 cup frozen corn, thawed
- 1/2 cup finely chopped red onion
- 1 small jalapeño, minced
- 1 orange or green bell pepper, diced
- 1 cup quartered cherry tomatoes
- 1 avocado, chopped
- 1/4 cup chopped cilantro
- 1/2 teaspoon cumin (affiliate)
- 1 lime, juiced
- 1 teaspoon salt
- 1/2 teaspoon pepper
Instructions
- In a large bowl, mix together all ingredients.
