Cowboy Caviar

Ingredients

  • 15 oz black beans (affiliate), drained and rinsed
  • 1 cup frozen corn, thawed
  • 1/2 cup finely chopped red onion
  • 1 small jalapeño, minced
  • 1 orange or green bell pepper, diced
  • 1 cup quartered cherry tomatoes
  • 1 avocado, chopped
  • 1/4 cup chopped cilantro
  • 1/2 teaspoon cumin (affiliate)
  • 1 lime, juiced
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Instructions

  1. In a large bowl, mix together all ingredients.
  2. Eat immediately or store covered in fridge.
