Description
Crispy Parmesan Sweet Potato Rounds are irresistibly good, and a frequent staple around our house! No one ever says no to second or third helpings!
Ingredients
Scale
- 2 large sweet potatoes
- 2 tablespoons olive oil (affiliate)
- 1 teaspoon dried thyme (or rosemary)
- 1/4 cup dried or shredded parmesan cheese
- 1 tablespoon cornstarch
- 1 teaspoon salt
- Black pepper to taste
Dipping sauce
- 2 tablespoons grainy dijon mustard (affiliate)
- 1/4 cup bbq sauce
Instructions
- Preheat oven to 450 degrees.
- Peel sweet potatoes and slice into 1/4 inch thick coins.
- Add to a large bowl and toss with olive oil, thyme, cheese, cornstarch, salt and pepper.
- Place in a single layer on a large parchment paper covered baking sheet.
- Bake for 15 minutes, then flip sweet potato rounds over and let bake for another 10 minutes.
