Talking about getting crazy around here! This is the first NON Pressure Cooker recipe I’ve posted since February 6th, 2018. At the time, I was posting about 50/50 PC and Non PC recipes, and frankly was getting overwhelmed by the non PC posts.

There were just too many options and my brain was on overload with the possibilities of what i could share with you. Because of that, I decided to exclusively post PC recipes.

Well, fast forward a year and a few months, and I’m experiencing a little burnout. By no means am I done posting PC recipes or calling myself a PC blogger, but this girl just needs a little break.

The cool part of this hiatus is that I’ll be sharing with you a whole bunch of non PC recipes that have been absolute staples in the Van Slyke household over the past year. Although I do cook quite often using only my pressure cookers, I also still do a lot of cooking outside of it.

One of my legit favorite recipes right now {actually, probably of all time} are these completely savage parmesan crusted sweet potato coins. We serve these basically every time friends come over, and in a perfect world they accompany my 4 ingredient grilled pork tenderloin and charred asparagus!

Those recipes will be coming soon as well. If you’re not a SWEET sweet potato fan like I am, these’ll be just perfect for ya. The nutty parmesan and the herby {sp} taste of the dried thyme will send your taste buds to another realm.

Did I mention that you absolutely must serve them with this two ingredient dipping sauce? It’s a marriage between whole grain mustard (this is my favorite) and bbq sauce (you just can’t go wrong with Sweet Baby Ray’s). We started making this sauce for these potatoes, but now it gets added to everything. It’s especially yummy with these veggie burgers! No regrets here friends!

Crispy Parmesan Sweet Potato Rounds

Description

Crispy Parmesan Sweet Potato Rounds are irresistibly good, and a frequent staple around our house! No one ever says no to second or third helpings!


Ingredients

Scale
  • 2 large sweet potatoes
  • 2 tablespoons olive oil (affiliate)
  • 1 teaspoon dried thyme (or rosemary)
  • 1/4 cup dried or shredded parmesan cheese
  • 1 tablespoon cornstarch
  • 1 teaspoon salt
  • Black pepper to taste

Dipping sauce

  • 2 tablespoons grainy dijon mustard (affiliate)
  • 1/4 cup bbq sauce

Instructions

  1. Preheat oven to 450 degrees.
  2. Peel sweet potatoes and slice into 1/4 inch thick coins.
  3. Add to a large bowl and toss with olive oil, thyme, cheese, cornstarch, salt and pepper.
  4. Place in a single layer on a large parchment paper covered baking sheet.
  5. Bake for 15 minutes, then flip sweet potato rounds over and let bake for another 10 minutes.
