When I first started using my pressure cooker, the main thing I was interested in making at first was rice. This was partly because I was itching to get rid of our tiny rice maker, but also because I was tired of overcooking, burning, or undercooking it on the stovetop. It never seemed to turn out!

Discovering that I could make perfectly cooked rice in less than 15 minutes, with only about 30 seconds of that time being hands on was literally a game changer. I often serve rice in our house with indian curries, simple roasted meat or seafood, or asian dishes, so being able to whip it up so quickly is amazing!
