Dinner at our house these days has been 80% tacos/quesadillas/nachos/enchiladas/burritos, 10% grilled pizza, and 10% grilled chicken or pork and sweet potatoes. Summertime food isn’t meant to be fussy or time consuming or stressful. It’s meant to be fun, low maintenance, and not something that takes forever and heats up every corner of your house!

We have a new addition to our family taking the form of a 6 month old baby boy, so my days of spending all of my free time in the kitchen has gone away for awhile. As I’m furiously typing this, he decided to trick me and wake up after 45 minutes of napping instead of the 2 hours I was hoping for… but, that’s alright, we’ll make do and get this rice recipe shared as quickly as possible!

I don’t know how to ask this without being awkward, but you’ve been to Chipotle right? It’s been a long while since I’ve met someone who’s never grabbed some grub from the beloved burrito chain, so I’m just going to assume that we’re all good and knowledgeable at this point. Unless you’re a no carbs type of person, I’m guessing you’ve had their cilantro lime rice, either in the brown or white variety. That fluffy goodness with just the right proportion of salt to cilantro to lime – you know the one?

Making this recipe in your pressure cooker is the way to go. If you don’t use your PC for all your rice making needs yet, it’s time to start! It produces such a fluffy grain, is never under or over cooked, and keeps warm until you need it.

Once the basic white rice is done cooking, fluff it up with some cilantro and a healthy dosage of lime juice, then enjoy alongside tacos, in a burrito bowl, or just by the spoonful!

Pressure Cooker Cilantro Lime Rice cooks in under 15 minutes and tastes just like Chipotle’s signature recipe!


Ingredients

Scale

1 cup long grain white rice

1 cup water

1 teaspoon salt

1 lime, juiced

1/4 cup chopped cilantro


Instructions

Rinse rice then stir together rice, water, and salt in the pressure cooker.

Lock lid and set to high pressure for 3 minutes.

When time is up, let pressure naturally release for 10 minutes, then release all remaining pressure.

Mix in lime juice and cilantro then serve!
