- 6 eggs
- 1 1/2 cups chopped ham
- 1 cup shredded cheddar cheese
- 1/4 cup diced red pepper
- 1/2 cup diced yellow onion
- 2 cups chopped spinach
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 2 Sheets Pepperidge FarmĀ® Puff Pastry
Instructions
- Preheat oven to 350 degrees and grease 12 muffin cup tin with cooking spray.
- Unfold Puff Pastry Sheets and cut each sheet into 9 squares. (You will have 6 extra squares).
- Stretch squares on all sides with your hands and tuck into each muffin cup, letting the edges be out of the cup.
- Whisk together eggs, ham, cheese, red pepper, onion, spinach, salt, and black pepper.
- Scoop 1/4 cup of egg mixture into each muffin cup and back for 20 minutes.
- Serve!
