Ingredients

- 1 cup rolled oats
- 2 tablespoons coconut oil (affiliate)
- 3/4 cup chopped nuts (your choice – I used a mixture of pecans, walnuts (affiliate), and peanuts)
- 2 tablespoons honey (affiliate)
- 2 tablespoons maple syrup (affiliate)
- 1 lemon, juiced & zested
- 1/2 teaspoon almond extract (affiliate)
- 2 tablespoons olive oil (affiliate)
- 1 tablespoon chia seeds
- 1 cup shredded coconut
Instructions
- In food processor, combine all ingredients but shredded coconut.
- Pulse until oats are finely chopped and ingredients start to stick together and pull away from the edges of the food processor.
- Roll mixture into small balls and roll in shredded coconut.
- Store in fridge.
