Pressure Cooker 5 Ingredient Cozy Winter Soup has potato, squash, bacon, onion, and chicken broth. That’s it! Snuggle up with a good movie and eat it with a crusty chunk of french bread.

- 4 strips thick cut bacon, diced
- 1 large russet potato, peeled and cut into 1 inch chunks
- 1 acorn squash, quartered, with seeds and pulp removed
- 1 large yellow onion, peeled and quartered
- 4 cups chicken broth (affiliate)
**Salt and Pepper to taste
Instructions
- Sauté bacon in pressure cooker until crispy. Remove to paper towel with a slotted spoon, keeping bacon grease in pot.
- Add potato chunks, squash, onion, and chicken broth.
- Stir, lock lid, and set to high pressure for 10 minutes.
- When time is up, let pressure naturally release for 5 minutes then release all remaining pressure.
- Carefully remove the acorn squash from the pot and peel skin off. Place squash back into pressure cooker.
- Pour the contents of the pressure cooker into a blender and puree until smooth.
- Season to your taste with salt and pepper, then top with crispy bacon and serve.
