Description

Pressure Cooker 5 Ingredient Cozy Winter Soup has potato, squash, bacon, onion, and chicken broth. That’s it! Snuggle up with a good movie and eat it with a crusty chunk of french bread.


Ingredients

Scale
  • 4 strips thick cut bacon, diced
  • 1 large russet potato, peeled and cut into 1 inch chunks
  • 1 acorn squash, quartered, with seeds and pulp removed
  • 1 large yellow onion, peeled and quartered
  • 4 cups chicken broth (affiliate)

**Salt and Pepper to taste


Instructions

  1. Sauté bacon in pressure cooker until crispy. Remove to paper towel with a slotted spoon, keeping bacon grease in pot.
  2. Add potato chunks, squash, onion, and chicken broth.
  3. Stir, lock lid, and set to high pressure for 10 minutes.
  4. When time is up, let pressure naturally release for 5 minutes then release all remaining pressure.
  5. Carefully remove the acorn squash from the pot and peel skin off. Place squash back into pressure cooker.
  6. Pour the contents of the pressure cooker into a blender and puree until smooth.
  7. Season to your taste with salt and pepper, then top with crispy bacon and serve.
