BRRRR! It’s freezing here today! Not only do we have a cold front blowing through, but the cedar fever allergies are also starting up. I’d like to say I’ve kicked my December/January allergies to the curb, but it’s simply not true. If you need anything for the next 2 months, I’ll be holed away in my house, sneeveling and sniffling the days away.
I’m on a binge to clean everything out of the fridge and pantry before Christmas, so the random meal experiments have been going strong! Today and tomorrow’s recipe both were born out a search through our produce and freezer, and I’m quite happy with how they turned out.
Making soup in the pressure cooker is one of the most satisfying things, but even more satisfying is making a soup that only uses 5 ingredients! Not only that, it uses 5 super simple, almost always on hand ingredients. Can I list them for you?
1 Potato
1 Acorn Squash (or butternut)
4 Strips of Thick Cut Bacon
1 Yellow Onion
4 Cups Chicken Broth
….and salt and pepper to taste {not included in the 5 ingredient count because please tell me everyone has those two on hand at all times…}
If you’re not into the blended creamy type soup, just chop all of your ingredients smaller and eat as a chunky vegetable soup in a thin broth. Either way will be great!

Your recipe looks great. I will try it soon. Just one complaint: please don’t set the recipes in heavy black backgrounds and thick black outline borders. I like to print them but printer ink is expensive and the recipe is just as good without all that dark background and thick black borders.
