Who knew that pork chops shred and taste just as good as a pork butt or tenderloin?? I definitely didn’t, until throwing them into my pressure cooker on a whim! Best case, I was hoping for a fork tender pork chop, but when I went to take the meat out of my PC, it literally fell apart.

Pork chops are usually at the bottom of my list only because they’re tricky for me to cook! They’re almost always dry and tough or too underdone for my liking. It’s hard to get that perfect temp. 

SO, when I discovered I still had some frozen pork chops in the freezer to use up before Christmas, I decided to give it a try in the pressure cooker. Oh my goodness I was so excited!!

This discovery opens up a whole new world of possibilities. And guess what? I didn’t even thaw the pork chops before throwing them in! All of the ingredients got thrown in, I set the timer, walked away, and this Pressure Cooker Shredded Pork Ragu was beeping and ready in under an hour.

My husband cooked some polenta to eat with the pork ragu and the combo wasn’t his favorite, so I went with the spaghetti instead! Actually, the second day I just ate the pork all by its lonesome and loved it just like that. If you have any other ideas on how to eat it, I’d love to hear your suggestions. Maybe on a hoagie bun, like an italian meatball sandwich? What else??

Pressure Cooker Shredded Pork Ragu

Ingredients

Scale
  • 1 tablespoon olive oil (affiliate)
  • 2 stalks of celery, diced
  • 1 carrot, diced
  • 1 onion, chopped
  • 1 pint whole cherry tomatoes
  • 15oz can diced tomatoes
  • 3 pork chops (fresh or frozen)
  • 2 teaspoons dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon black pepper
  • 1 tablespoon salt
  • 2 tablespoons red wine vinegar (affiliate)

Instructions

  1. Add everything to pressure cooker.
  2. Lock lid and set to high pressure for 20 minutes.
  3. When time is up, let pressure release naturally for 15 minutes then release all remaining pressure.
  4. Remove pork chops and shred. Remove 1 cup of liquid from pressure cooker and discard.
  5. Add remaining liquid and vegetables to blender. Puree until smooth.
  6. Add sauce back into pressure cooker and stir shredded pork into sauce.
  7. Serve over cooked spaghetti.
