Pressure Cooker Adobo Sofritas Tacos with black beans and lime guacamole are a summer must for your meatless Mondays!
Ingredients

- 1 tablespoon canola oil (affiliate)
- 16 oz firm tofu, pressed
- 1/2 of a large yellow onion
- 1 cup mild to medium salsa (affiliate)
- 2 teaspoons cumin (affiliate)
- 1 teaspoon smoked paprika
- 3 chipotle peppers in adobo sauce
- 1 teaspoon oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup water
- 1 large avocado
- 1/2 lime, juiced
- 4 large flour tortillas
Instructions
- Heat oil in pressure cooker on the sauté setting, then add pressed tofu, and cook until starting to brown, crumbling as you cook.
- While tofu is cooking, add onion, salsa, cumin, paprika, chipotle peppers, oregano, salt, and pepper to a blender or food processor. Puree until smooth.
- Pour sauce into pressure cooker, stir, lock lid, and set to high pressure for 10 minutes.
- Make guacamole by mashing avocado with lime juice and a pinch of salt.
- When pressure cooker time is up, let pressure naturally release for 10 minutes then release all remaining pressure.
- Spoon sofritas tofu onto tortillas and top with guacamole.
