Pressure Cooker Adobo Sofritas Tacos with black beans and lime guacamole are a summer must for your meatless Mondays!


Ingredients

Scale
  • 1 tablespoon canola oil (affiliate)
  • 16 oz firm tofu, pressed
  • 1/2 of a large yellow onion
  • 1 cup mild to medium salsa (affiliate)
  • 2 teaspoons cumin (affiliate)
  • 1 teaspoon smoked paprika
  • 3 chipotle peppers in adobo sauce
  • 1 teaspoon oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup water
  • 1 large avocado
  • 1/2 lime, juiced
  • 4 large flour tortillas

Instructions

  1. Heat oil in pressure cooker on the sauté setting, then add pressed tofu, and cook until starting to brown, crumbling as you cook.
  2. While tofu is cooking, add onion, salsa, cumin, paprika, chipotle peppers, oregano, salt, and pepper to a blender or food processor. Puree until smooth.
  3. Pour sauce into pressure cooker, stir, lock lid, and set to high pressure for 10 minutes.
  4. Make guacamole by mashing avocado with lime juice and a pinch of salt.
  5. When pressure cooker time is up, let pressure naturally release for 10 minutes then release all remaining pressure.
  6. Spoon sofritas tofu onto tortillas and top with guacamole.
