Description
Pressure Cooker Brownie Batter Breakfast Cake is made with ground oats, coconut oil, cocoa powder, and maple syrup! Good for you ingredients and a pop of chocolate goodness!

- 2/3 cup rolled oats, pulsed in food processor (affiliate) or blender (affiliate) until the consistence of a chunky flour
- 2 tablespoons flour
- 1 tablespoon vanilla (affiliate) or chocolate protein powder
- 2 tablespoons unsweetened cocoa powder (affiliate)
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup + 2 tablespoons almond milk
- 2 tablespoons maple syrup (affiliate)
- 1 tablespoon coconut oil (affiliate), melted
- 1 teaspoon vanilla (affiliate)
- 1 egg
- 1 tablespoon chocolate chips (affiliate)
Instructions
- Whisk together almond milk, maple syrup, coconut oil, vanilla, and egg.
- Add remaining dry ingredients {oats, flour, protein powder, cocoa powder, baking powder, and salt}, and stir.
- Place trivet in bottom of pressure cooker then add 1 cup of water.
- Grease a small heat proof container with cooking spray, then pour brownie batter into container.
- Lower onto trivet, lock lid, and set to high pressure for 20 minutes.
- When time is up, let pressure release naturally for 5 minutes, then release all remaining pressure.
- Top with chocolate chips and serve.
