Wow! What a whirlwind of a day! A morning spent at home working, a trip to Hobby Lobby, a car that won’t start, a scooter ride home {BIRD is the best!}, a bike ride to Liam’s daycare to pick him up {since his stroller and carseat are in the car}, and now an afternoon trying to decide what to do about the car. We’re a one car family and not only that, a one car family that still drives my first car, a 2006 Mazda Tribute. She’s seriously a champ, but we’re to the point where the next large maintenance cost we have is probably gonna push us to move on. Deciding on the cut off amount is the tricky part though…

There’s a silver lining in all of this though, and that’s the fact that tomorrow morning it’ll all be better and we’ll have brownie batter breakfast cake all ready to be devoured! This breakfast is a little more decadent and sweet than we normally have around the house, but I’m thinking it came to my attention just in time.

The recipe below serves 2 people a decent sized breakfast but if you’d like to double it, add 10 more minutes onto the cook time, just to make sure it cooks all the way through. Enjoy!

Ingredients

  • 2/3 cup rolled oats, pulsed in food processor (affiliate) or blender (affiliate) until the consistence of a chunky flour
  • 2 tablespoons flour
  • 1 tablespoon vanilla (affiliate) or chocolate protein powder
  • 2 tablespoons unsweetened cocoa powder (affiliate)
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup + 2 tablespoons almond milk
  • 2 tablespoons maple syrup (affiliate)
  • 1 tablespoon coconut oil (affiliate), melted
  • 1 teaspoon vanilla (affiliate)
  • 1 egg
  • 1 tablespoon chocolate chips (affiliate)

Instructions

  1. Whisk together almond milk, maple syrup, coconut oil, vanilla, and egg.
  2. Add remaining dry ingredients {oats, flour, protein powder, cocoa powder, baking powder, and salt}, and stir.
  3. Place trivet in bottom of pressure cooker then add 1 cup of water.
  4. Grease a small heat proof container with cooking spray, then pour brownie batter into container.
  5. Lower onto trivet, lock lid, and set to high pressure for 20 minutes.
  6. When time is up, let pressure release naturally for 5 minutes, then release all remaining pressure.
  7. Top with chocolate chips and serve.
