Pressure Cooker Buttery Berry Breakfast Quinoa is sweetened with maple syrup and cinnamon and packed with nutrients for a healthy breakfast!


Ingredients

  • 1 tablespoon butter (affiliate)
  • 1 cup red quinoa (affiliate)
  • 1 cup vanilla (affiliate) almond milk
  • Pinch of salt
  • ½ teaspoon cinnamon (affiliate)
  • ¼ cup half and half or heavy cream
  • 2 tablespoons maple syrup (affiliate)
  • 1 cup frozen mixed berries
  • 1 cup almond milk or cream

Instructions

  1. Melt butter in pressure cooker on sauté setting and add dry quinoa. Stir for 2-3 minutes until starting to smell nutty.
  2. Add almond milk and salt, stir, then lock lid and set to high pressure for 1 minute.
  3. When the time is up, let pressure naturally release for 10 minutes, then release all remaining pressure.
  4. Stir in cinnamon, ¼ cup of cream, and maple syrup.
  5. Serve in a bowl topped with ¼ cup frozen berries and drizzled with ¼ cup almond milk or cream.
