Eeeek!! I can’t get over how tasty this breakfast quinoa is! To be completely honest, this was my first time using this grain as a breakfast food, and I’m ecstatic with how tasty it turned out. I’ve never been a massive fan of oatmeal for breakfast, but something about the texture of the quinoa (it still has enough of a snappy bite when cooked) is completely sucking me in. The mushiness of oatmeal has never sat well with my palette, so I’ll be moving to the quinoa party for the unforeseeable future!
Since today’s Friday, let’s have some Friday fun talk! Normally by today I’m totally checked out for the weekend, but since we got our little in a Thursday/Friday daycare, I’m all work and productivity until afternoon pick-up. It’s been amazing to have these 10 hours a week to myself and I’m surprised how fast I can actually work with a few focused hours per day.
We don’t have any major plans for the weekend, but Kev is taking the little man on a playdate with a friend tomorrow, so I’m thinking about taking the opportunity to snag a pedicure with a friend and possibly do some thrifting! The other day I found a Kelty Kids Hiking Pack for $9.99 (normally about $300), so I’m on a bit of a bargain high right now. We’re tentatively planning a trip out to Oregon this coming Fall, so my next mission is to find our little guy a fall/winter wardrobe since all he has right now is sleeveless one piece outfits and shorts and onesies. We’re approaching record highs this weekend in August (104, 106, 107), so obviously he won’t be needing any of those clothes anytime soon!

Pressure Cooker Buttery Berry Breakfast Quinoa is sweetened with maple syrup and cinnamon and packed with nutrients for a healthy breakfast!
Ingredients
- 1 tablespoon butter (affiliate)
- 1 cup red quinoa (affiliate)
- 1 cup vanilla (affiliate) almond milk
- Pinch of salt
- ½ teaspoon cinnamon (affiliate)
- ¼ cup half and half or heavy cream
- 2 tablespoons maple syrup (affiliate)
- 1 cup frozen mixed berries
- 1 cup almond milk or cream
Instructions
- Melt butter in pressure cooker on sauté setting and add dry quinoa. Stir for 2-3 minutes until starting to smell nutty.
- Add almond milk and salt, stir, then lock lid and set to high pressure for 1 minute.
- When the time is up, let pressure naturally release for 10 minutes, then release all remaining pressure.
- Stir in cinnamon, ¼ cup of cream, and maple syrup.
- Serve in a bowl topped with ¼ cup frozen berries and drizzled with ¼ cup almond milk or cream.
