My availabity to spend any sort of major time in the kitchen this week has been cut short due to a baby with a cold (who also may be teething) and now a husband who took his very first sick day in the past 2 1/2 years. We’ve been up at least a few times every night and so we’re all out of whack, which means easy dinners to the rescue! Last night we had one of those salad bags from Costco which was actually really delicious and such a lifesaver. I added some grilled chicken from the other day as well as juicy clementine wedges so it turned out to be quite filling and healthy.
One can only eat salad for so long though before some carbs are necessary. I’ve made this pasta a few times now due to the fact that I bought what seemed like a 50lb block of cream cheese from Costco. It’s been a struggle trying to get it used up, but I think we’re at the tail end of it now! Only 8oz to go! Anyways, this pressure cooker cream cheese pasta might actually be the simplest dinner I’ve made to date. It takes 3 ingredients (not including water, salt, and pepper), and then if you have anything extra you’d like to throw in, that’s on you!
I haven’t added any veggies yet, but broccoli would fit right in as well as mushrooms or zucchini.
I hope this meal helps to simplify your week! Dinner doesn’t need to be fancy all the time, sometimes we just need to throw some shells in a pot, stir in a hunk of cream cheese, and call it a day.

Ingredients
- 16oz dried pasta
- 1 tablespoon salt
- 8oz cream cheese
- 3/4 teaspoon garlic powder
- 1 teaspoon black pepper
- **optional add-ins: parmesan cheese, red pepper flakes, fresh or dried parsley
Instructions
- Pour dried pasta into pressure cooker and add water until pasta is covered about 2 inches.
- Stir in salt then lock lid and set to high pressure for 3-4 minutes, depending on the size of your pasta.
- When time is up, do a quick release and drain pasta, reserving 1 cup of pasta water. Set pasta aside.
- In pressure cooker, use sauté setting to melt cream cheese, whisking constantly until smooth.
- Thin with pasta water until desired thickness, then mix in garlic powder and black pepper.
- Turn pressure cooker off and then stir in cooked pasta.
- Serve with optional add-ins!
