Pressure Cooker Mint Simple Syrup makes the perfect blended juleps or mojitos for your Kentucky Derby Party!
Two years ago we hosted a Kentucky Derby party and told all our friends that we were dressing up, wearing hats, eating all the derby foods and drinks, and doing it big! Well, 2 of us did all those things… HA! Kev and I dressed up, I made a ridiculous hat with feathers and birds perched on the rim, and everyone else showed up in jeans. But hey, we got some classy pics out of the deal and the food was still so fun to prepare and eat!
We have some friends with a boutique bartending business that brought everything for the classic mint julep, and that got me thinking this year about whipping up some minty simple syrup to have on hand. Not only can you use it for your Derby day festivities, but it’s great for summertime lemonades, iced teas, blended strawberry mint daquiris, julep’s, mojitos, and really anything else that you want a bit of minty flavor.
When you make it on the stovetop, you bring it to a boil for a few minutes, then remove the leaves and let it sit and steep for about 30 minutes. By using your pressure cooker, a few of those steps get cut out and all that’s necessary is mixing everything up, setting it to high pressure for 1 minute, allowing the pressure to naturally release, and it’s good to go!
The recipe below is for a small batch, but if you’re having a mega gathering or want a larger quantity to stir into a big batch of tea or lemonade, you can fill up your instant pot with equal parts sugar, water, and mint!

Ingredients
- 1 cup water
- 1 cup granulated sugar
- 1/2 cup fresh mint leaves
Instructions
- Stir all ingredients together in pressure cooker.
- Lock lid and set to high pressure for 1 minute.
- When time is up, let pressure naturally release for 10 minutes then do a quick release.
- Remove mint leaves and pour simple syrup into airtight container and store in fridge until ready to use!
