Pressure Cooker Wild Rice Stuffing has mushrooms, cranberries, and is the perfect gluten-free Thanksgiving side dish!
Ingredients

- 2 tablespoons olive oil (affiliate)
- 1 onion, diced
- 1 tablespoon minced garlic
- 4 stalks celery, chopped
- 8oz sliced white mushrooms
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 1/2 cups wild and brown rice blend, rinsed
- 2 cups chicken broth (affiliate)
- 1 cup whole fresh cranberries
- 1/2 teaspoon sage
- 1 teaspoon thyme
Instructions
- In pressure cooker, sauté onion, garlic, celery, and mushrooms in olive oil for 2-3 minutes.
- Add all remaining ingredients, stir, lock lid, and set to high pressure for 22 minutes.
- When time is up, let pressure cooker do a full natural release then serve.
