Thanksgiving is just a few days away and my list of side dishes probably needs to be cut in half! This is my first time hosting holiday dinner and my ambitions might be a bit high at this point. It’s so hard to eliminate any dishes though! When I look at the menu, those 3 kinds of potatoes, 2 kinds of stuffing, sourdough, crescent rolls, cranberry sauce and cranberry fluff, creamed corn, brussels, 3 desserts,.etc,….all of them seem necessary.

This gluten-free wild rice stuffing is a new addition to my Thanksgiving must-haves, but it’s completely delicious and a fun change from the classic bread stuffing. I am by NO MEANS saying that we’re not also having classic stuffing, but this is also on the menu and is perfect for our gluten-free guests!

This stuffing has all the usual ingredients that a “regular” stuffing would have, except the bread of course. It starts with a savory base of onion, garlic, celery, and mushrooms, then in goes the rice, chicken broth, spices, and my favorite part – fresh cranberries! Once everything cooks, the cranberries disintegrate into everything, but that subtle sweetness and tang is still there.

I was comparing stuffing recipes with a neighbor last night and he insisted that nothing sweet should go in a stuffing, to which I heartily disagreed! To me, there’s nothing better than apples, cranberries, or a bit of pear in the mix to balance all the salty and savory out. At least throw in a few dried cranberries for goodness sake!

Ingredients

Scale
  • 2 tablespoons olive oil (affiliate)
  • 1 onion, diced
  • 1 tablespoon minced garlic
  • 4 stalks celery, chopped
  • 8oz sliced white mushrooms
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 1/2 cups wild and brown rice blend, rinsed
  • 2 cups chicken broth (affiliate)
  • 1 cup whole fresh cranberries
  • 1/2 teaspoon sage
  • 1 teaspoon thyme

Instructions

  1. In pressure cooker, sauté onion, garlic, celery, and mushrooms in olive oil for 2-3 minutes.
  2. Add all remaining ingredients, stir, lock lid, and set to high pressure for 22 minutes.
  3. When time is up, let pressure cooker do a full natural release then serve.
