Ranchhouse Cookies

Ingredients

  • 1 cup butter (affiliate)
  • 1 cup granulated sugar
  • 1 cup brown sugar (affiliate)
  • 2 eggs
  • 2 teaspoons vanilla (affiliate) extract
  • 2 cups all purpose flour
  • 1 1/2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 1 tablespoon orange zest
  • 2 cups old fashioned oats
  • 1 cup shredded coconut

Instructions

  1. Preheat oven to 350 degrees.
  2. In a large mixing bowl or with your electric mixer, cream butter and sugars until smooth and fluffy. Add in eggs one at a time and beat to incorporate. Add in vanilla and beat again.
  3. Add flour, baking soda, salt, and orange zest to batter and mix slowly until just combined.
  4. Add oatmeal and shredded coconut and stir gently to combine.
  5. On large baking sheet lightly greased or covered with parchment paper, spoon dough by rounded teaspoon.
  6. Bake for 8 minutes, or until middle is still slightly doughy and edges are golden.
  7. Remove from oven and transfer to cooling racks.
