Ingredients

  • 1 tablespoon olive oil (affiliate)
  • 1 onion, chopped
  • 1 green pepper, chopped
  • 1 clove garlic, minced
  • 1 cup shredded sharp cheddar
  • 1 1/2 cups chopped leftover ham
  • 4 cups shredded frozen hash browns
  • 8 eggs, whisked
  • 1/2 cup salsa verde (affiliate)
  • 2 teaspoons salt
  • 1/2 teaspoon pepper
  • 1 teaspoon paprika
  • 1/4 teaspoon cayenne
  • 1/2 teaspoon garlic powder

Instructions

  1. Spray the pot of your slow cooker or pressure cooker with cooking spray.
  2. Combine and stir all ingredients in slow cooker or pressure cooker on “slow cook” setting.
  3. Cook on high for 4 hours, then turn off heat and serve.
