Why not use up your leftover holiday ham in a super simple slow cooker breakfast bake? Make it in 4 hours in your slow cooker or pressure cooker!
Breakfast!! Are you a fan? Silly question. You might just be a crazy person if you don’t care about breakfast. Around the holidays I’m a big proponent for giving breakfast its moment in the spotlight and this Slow Cooker Leftover Ham Breakfast Bake is just the thing. We place all this focus on the big holiday dinner, but you gotta have some energy to do all that cooking, right? Enter the gloriousness of a hearty breakfast.
I go back and forth between obsessing over sweet and savory breakfasts, and if I’m being honest with myself I’ll choose sweet over savory every time. But, you know when you eat something sweet for breakfast and then about an hour later you start to get hungry and maybe your stomach doesn’t feel super great either? Yeah, sometimes it just doesn’t do the trick. We need something with a little oomph and a good amount of protein!
In this recipe I used little hunks of ham from my pressure cooker ham recipe, but if you opted for turkey on thanksgiving, you can easily use sliced ham from the deli section. OR! If you’re feeling a little adventurous, try using turkey instead. I actually really like that idea. Someone please do it and let me know what you think!
