Happy Super Bowl week everyone! A time for snacks and appetizers galore and of course, can’t forget the coleslaw! …Ok, maybe that’s a stretch, but down here in Austin tacos are always a fantastic choice for what to serve at a get-together and this slaw is PERFECT for that very purpose. It has some major kick from the jalapenos, but don’t be afraid – we all need a good kick in the pants sometime!
I’m loving this ‘slaw because you can eat it on its own as a vibrant side dish, or you can serve it up on some tacos, burgers, or sandwiches. It takes less than 15 minutes to whip it up from start to finish and it’ll be devoured in the same amount of time!
By the way, I’m absolutely in love with this new bowl I got! It was a Goodwill find last week for only $4 and it’s handmade by someone named Branz in 2011. So, Branz, if you ever read this, your bowl has found a loving home and will see lots of food in the years to come.
A quick and easy variation of classic coleslaw.
