10 Minute Tuna Tostadas are a seriously lifesaving lunch or dinner using pantry staple tuna as the base and then throwing in some spices, cheese, and whatever chopped veggies you have on hand!

- 4 tostada shells
- 1 can tuna
- 3 tablespoons plain greek yogurt
- ¼ cup red pepper, diced
- ¼ cup yellow onion, diced
- ¼ teaspoon cumin (affiliate)
- ½ teaspoon salt (less if your tuna is high sodium)
- ¼ teaspoon black pepper
- ½ cup shredded cheddar cheese
- ½ of an avocado, chopped
- ¼ cup cilantro, chopped
- 1 lime, cut into wedges
- sour cream for dollops
Instructions
- Preheat oven to 425 degrees.
- Combine tuna, yogurt, red pepper, onion, cumin, salt, and black pepper. Mix.
- Spoon tuna mixture onto 4 tostadas, spreading almost to edges.
- Sprinkle with cheddar cheese.
- Bake at 425 degrees for 10 minutes or until cheese is melted.
- Serve with avocado, cilantro, lime, and sour cream.
